The offense has a sit with the defenders, if he goes beyond the defenders then he can "cherry pick" which means just sit by the goal the entire game.
It's kind of like the neutral zone in football.

You can't be behind the last defender when the ball is kicked.
Else you would have everyone by the goal and just homing long balls across the field.

It's offside (without the s). And in the simplest terms you can't be back behind the last line of defense (goalkeeper the exception) when the ball is passed to you. It prevents teams from just parking a guy by the goal all game. If I had to compare it to a call in another sport, it's in the spirit of the 3 second call in basketball.
