You can buy all those and more except venison in MS, there is a carve out for rabbits and the others are not considered game animals in MS as they are not indigenous to the state.
A quick google search reveals the sale of meat from whitetails is illegal in Texas as well, sale of the meat from exotics is allowed pretty much everywhere.

Yep. A bunch of venison filets batch cooked and set under a heat lamp for an hour. Those things are going to be deer jerky when Bubba comes in to order one.

But who would eat camel or kangaroo or beaver? That just sounds terrible.

Maybe it's aged and marinated. That's the only way I can imagine it'd be tasty enough for a sandwich and not chewy as hell.

Seems like anyone who likes venison would already have it.
On the plus side, is there any chance "deer ranching" could become a thing and we could thin the wild herd?

You could be correct, I just was going by readily available info online.
Perhaps it was non native deer sausage? Axis, Fallow or some other exotic?
Exotics can be sold in every state I know of, whitetails not so much. all I know of state the same reasons cited in the linked article.
