This might be the most Springfield MO thing I’ve ever seen

I just got “Springfield Style Cashew Chicken Poutine” at Lindbergs on Commercial.
It’s kinda exactly what you would think it is. Is is a horrible idea to mix Cashew chicken with fries and cheese? Sure.
Is it also delicious? Also sure.

and strangely enough the best of the best cashew chicken resides in Carthage, MO and not Springfield.

It's funny, that growing up in the Rolla / Lebanon area of the state, I just assumed all cashew chicken was similar to what we always had when going to the big town of Springfield. Not until much later in life did I realize that it's kind of a Springfield thing and other places cashew chicken is just meh compared.

Bamboo has a place in Webb City and Joplin, but the one it Carthage is better.
In Springfield there use to be a place on South Campbell that was my favorite, but it closed. I like the chicken at Riksha, but we usually get our Cashew Chicken at Canton or The Wok.
In the 90’s and early to mid-2000’s Diamond Head in West Plains was the best. Their cashew sauce was thicker more like a brown gravy texture and with an onion and little soy sauce flavor. Some places cashew sauce doesn’t have enough onion flavoring or they can have a salty flavor instead of soy sauce
Some places will have big pieces of chicken you have to cut in half to eat.
I think the best places have all smaller chunks of chicken with a thick cashew sauce.
