You already have my dry rub, my BBQ sauce, grilled Greek swordfish, grilled collie and my spaghetti chili recipe's. Now you are just getting greedy.

I don't have access to this anymore. It was gone before I got a chance to write it down for my personal cookbook.
One thing I make that people tend to love is guacamole.
3-4 ripe avocados
1 diced tomato
1/2 diced Vidalia or any sweet onion (or more, according to taste)
2 diced serrano chiles (or 1 large jalepeno, depending on taste)
2 toes of carlic, finely minced
1/4 cup chiopped cilantro
1-2 limes, juiced
salt and pepper to taste
1 spoonful of sour cream
Place the avocado meat in a bowl and chunk it with a fork, being careful not to get it too mushy - leave it chunky. Add tomato, onion, peppers, garlic and salt and pepper. Stir together. Add cilantro and fresh squeezed lime juice, and stir. Do not over-stir, just enough to mix it. Then add the spoonful of sour cream to give it a creamy texture. Stir gently until blended in. Garnish with a sprig of fresh cilantro and serve.
If it's not going to be eaten immediately, or if it will be sitting out for a while, add a couple of the avocado pits - this will keep it from turning brown.
It's pretty easy to increase the recipe for a big crowd, just increase the proportions. And taste it along the way. That way 1)you get to taste it, and 2)you can keep the proportions in balance.
In a pinch, like during the winter and spring when you can't get good tomatoes, i've used canned rotel tomatoes.

My cousin mizzoukillz will confirm that this is a staple in any Missourians diet. Oh and don't forget to bring along some "Soda" or "Pop" or whatever they call it up there...

100 percent true! But that is some KILLER hot sauce. Mexican Villa is worth it's weight in gold just because of that amazing damn hot sauce.
Do you live in Springfield? Or did you attend university there?
