I think the jobs are close enough that the determination of which was "better" would come down to the candidate himself.
All of these job rankings aren't nearly as static as we the fans would like to believe and it ultimately just comes down to what the candidate wants.
Case in point, RichRod turning down Alabama.

I actually have a hard time figuring out where they would win one at all and it makes this whole subject very perplexing

UF has all the assets to win multiple NC, more so than any program in the SEC. The fact that they have a string of failures since UM is baffling.

Not sure it's relevant. Florida's not likely to hire people with mental disabilities unless it's part of an affirmative action initiative.

So Coach O’s Natty was due to what Saban built too I suppose? Les Miles started in 2005 and won a Natty in 2007. Bad coaches can make a ship sink fast too. Both Miles and Orgeron won it all with good recruiting and a good staff, just like all NC’s have.

Florida has had a hard time hiring another Spurrier or Meyer. LSU can't find another Saban. Bama struggled for 25 years to find another Bear.
"Better job" doesn't matter. Only 1 fish out of the sea MIGHT be a long tenured elite coach. Odds and sample sizes are very low. It's just up to that individual dude's preferences.
