Tennessee had beaten them two years before when they had Heisman winner Eddie George at TB. I don't think Tennessee would have backed down at all, and were much better defensively, and arguably more balanced offensively in 1998.

The Alabama dynasty has terribly skewed people's perceptions of what champion teams used to be. Tennessee was and is a perfectly valid champion in the annals of history. Tennessee fans may overrate how good Tennessee was on a national scale back in the 90's but they were still nationally relevant for a good portion of 15 years which meant something in those days as outside of Alabama, Auburn and Florida no one else was really sustaining that level in the SEC at that time. We have nothing to be ashamed of from that 85-01 period.

The SEC had the most teams (7) in the final AP top 25 (the Big 10 and Big 12 each had 5) of any conference. The SEC has only had that many finish in the top 25 3 times since then. As far as I can see, that is the most teams the SEC has ever had finish in the final AP top 25 poll.
