taking the family in a couple weeks, only supposed to go for 1 day. Do yall think we can get the full experience in 1 day or should we add a day?

Big NO. I know people who make 5+ day vacations out of it annually and they still never fit everything into that span, even with the fastpass thing Disney offers. That said, with COVID being a thing, perhaps you have a better shot of fitting more in with fewer people there.

Definitely not
I'd suggest you go to The Magic Kingdom, The Animal Kingdom, and Epcot. They're all different parks with fun rides and shows.
If Disney World is not a trip that you can make easily, I'd add a few days so you can visit the different parks and not have to cram everything into one day.

Add a week. We did 4 days back in January and that was enough to see the whole magic kingdom and half the animal kingdom. I wanted to go to Epcot but my wife did not think the 5 year old would care for it.

To me Disney is one of the most over rated anything. Last time we went when leaving on the shuttle bus to the hotel you have never seen so many stressed out people. I was in the back and looking forward there were wives and husbands yelling at each other, yelling at kids, kids crying and complaining. Afterwards I thought I should have taken a video and put it on youtube titled "happiest place on earth" which is their slogan.
To give credit Disney does have great customer service, keep the place clean and is considered gold standard. There's a website or ap that shows wait times. If you just have a day I would suggest pick out a couple of main things you want to do, get the quick pass for those when you get in, go to the parade(get a spot early or you are in a crowd 10 deep getting knocked around) and fill in with some smaller line attractions as opposed to trying to squeeze in everything you can. Great fireworks show if you are there till end of day. Also the live performances are all outstanding. Just don't be one of the angry as hell stressed out people on the shuttle bus at the end.

One day is not enough time to see even one park. If you do just have one day and have smaller children, I suggest the following:
1. Get there early and be ready when it opens. It takes a while to park and get transported to the park
2. Buy your tickets ahead of time, you don't want to be in that line
3. Get a single or double stroller and make the little ones get in.
4. If you have two adults, send one to get fast passes for your favorite adult rides
5. Go immediately to the back of the park, hit the famous Dumbo ride and then go to toon town before the rest of the people mingle to the back. Kids can ride Goofy's ride, and maybe get a short line to see Mickey or Minnie.
6. When you leave this area, you may want to hit the Dumbo ride again if your kids love it.
7. Next hit the teacups and then It's a Small world. I hate the latter, but it is a must see at least once.
8. Finally hit the haunted house.
9. Don't forget your fastpass
10. By now everywhere is crowded. Eat lunch early or late, not between 11:30 - 1:00. Too crowded.
11. When you need a break from lines, go to the island (take the boat over) and explore a bit with the kids. They will love the caves and the fort.

We went to Orlando for 3 days in early November for our Anniversary. We did one day at Universal Studios. The next day we went to the Magic Kingdom. We basically showed up and got tickets to MK. They only let a set # of people in the park but you can make reservations with the Disney app. The MK was the only park that had any reservations at the last minute. All the Lyft drivers we talked to told us Discovery Cove is the best park in Orlando. It's basically a large aquarium you can swim in. Evidently you have to make reservations for that too.

Big thumbs up on discovery cove. Great experience with the kids and great food. Kids at the time were 10, 11, 13, and 14.

I saw the same thing lol. Wife and I had ours kinda young and have taken her to a lot of adult places we Probly shouldn’t have... the upside is a very cultured 6 year old (5 at the time we went) but she ls great bc it’s like taking a little adult with us wherever we go. She’s been eating in nice restaurants her whole life. We were the people with a baby in a bar... like I said hindsight maybe not the best idea but it has created a very well mannered child when in public. We had a great time laughing at people older than us with 3 horrible little uncultured swine ruining their very expensive vacation. Nothing like paying $100 for breakfast.

Oh magic after hours us cool as hell if you are staying on property. We stayed at wilderness lodge which was pretty sweet.
But they will let you in the park after they close for a couple hours. No lines. Ride everything you want.

That’s cool. This is the place I really want to visit and do the dolphin swims with my kids. A lot higher on my list than Disney (I can’t stomach rides at all, so Disney had never been of interest to me).

It's basically like a day at the beach. But a really cool beach (or beaches) with a great breakfast and huge lunch.
I think we found some sort of deal through costco that tied in multiple parks and Busch gardens (included the hotel as well). In the bundle, discovery cove was basically half off.
As opposed to most other "hustle-bustle" parks, it was cool to have a spot that was so chill. A great change up on the vacation.

We spent one day with a 3 yo and 5 yo at Magic Kingdom several years ago. We had to hustle just to get half of it. If you want to get in the whole park you’ll need a couple days.
Legoland is a nice park that you can knock out in one day.
