Membrane removed, seasoned with salt pepper garlic powder and cayenne.
Coals getting ready, hickory soaked for about 2 hours.
We are going with Salt Life bbq sauce today.

On the smoker with a big chunk of hickory, which I will remove in about 15 minutes, don't want too much smoke.

Getting some nice color now, meat is just now starting to pull back from the bone a little.
I've already had to recoal once, Kingsford shite the bed in 2007.

I just gave it a baste with Salt Life bbq sauce with some Frank's Red Hot mixed in. Added more coals.
We are going into the second half now, with a lead. The meat isn't pulling off the bones very fast, but that could happen quickly in the next 30 minutes.

Throughout the night, when there's no direct light, and a thin veil of clouds keeps the stars out of sight, I can smell the colors, outside on my lawn... the moist green organic, that my feet tread upon.. and the black oleander, surrounded by blues...

Ribs are done, meat pulling off bone, resting on the counter while the wife's cole slaw and potato salad come together in the fridge.
