After Texas blows out Bama in TuscaLoosa we should be ranked #1 or #2

IMO a #1 ranking would be entirely justified given that no one else has been able to do that to Bama. All their losses were close last year so a blowout would send a huge message to the CFB world.
On the other hand a #2 ranking could also be justified because we were well on our way to blowing them out in Austin and went on to have a mediocre season after they injured Ewers. So who's to say that couldn't happen again?

But he cannot take a hit. And he will get hit often in Tuscaloosa. He's never been able to take a hit dating back to his days in high school.

They're likely to not even be the #3 best SEC team this season. Counting Texas They're probably #4 or #5, so I somewhat agree with you.
