IMO to put a good sear on a steak you need to get way hotter than 400. Best I've been able to do is use lump charcoal on an adjustable grill and pull it up right under the grate. Sunofabitch was so hot it almost melted by glove. Temp on grill with lid closed pegged out over 800 (those thermometers are crap though). Steaks were medium rare with a dark brown/black crust. Solid.
Alot of smoking recipes are built around holding 225 degrees for a long time. The tough part is getting it to the desired temp and then holding it over the long haul without having to constantly mess with it. The smoker needs to be almost air tight except for openings you control.
There aren't many grills that can smoke and sear well IMO because the designs have to be different....but this is just my own experience. I'm sure there are others on here that know much more about it than I do.

Why would anyone want to cook with these? Not being a smartass, i'm being serious......
Is it just another gimmick to make the whole process easier and more convenient?....Or is it suppose to improve on the process?
I don't know anything about them, but they look like something a communist would cook with to me......

I was suspicious, too. It's legit. The pellets are just compressed hardwood.

I don't cook with anything but pecan wood or oak . Bbq isn't something that's hurried along. It's slow,time consuming and not something I want to rush. If you cooked a 7 lb butt in less than 11 hrs, you done fricked up,IMO.

That's more or less what I do. Still, I'm not gonna leave a steak on a grill for more than 7-8 minutes, unless it's really thick.

BGE or GTFO. I bought Mrs. VoxDawg an XL BGE last year for her birthday, and we love it. It can maintain 900-1100 F indirect for brick oven pizzas, etc. Obviously that'll put a helluva sear on a filet.

I think it is a bit of both. The pellets make it convenient to control the heat by controlling the amount of fuel the auger feeds the fire pot. Also nice to be able to buy such a wide variety of uniform sized woods. Apple and Hickory is a nice mix.
For me, at the end of the day it is about RESULTS. I like how this grill simplifies the process. I've only spoken with two people that own them and they like them better than their BGE. I take that as an objective opinion since they have actually cooked with both.
It is not my goal to convert anybody. Just looking to gain knowledge. Thanks for your insight.

Buddy, if I had the pamphlets I'd already be doing it. If there was a heaven and I made it to St Peter's pearly gates there would undoubtedly be a BGE welcoming me to the promised-land. As it stands, though, I'd likely instead be damned to watch the 2010 season highlights on repeat

Coke Pepsi... Fords/Chevy... Let the sheep follow their leader. As for me, I will choose the grill with the best results. It may end up being a BGE, but not because I made an uniformed opinion. It will be because I tried both and picked the one with the best results.

We (I) sprung for the BBQ Guru pit control fan/computer combo. I can load the egg with lump charcoal, put a brisket on, set the pit for 225 & the meat for 190 (so the internal fat renders) and leave the bastard for 16 hours untouched. Comes out perfect every time.
The pellets look like something you'd feed a deer. (FWIW, the red bag Royal Oak hardwood lump that they sell at Wal-Mart for $6/ 9lbs. is the same charcoal in the BGE-branded $30/ 20 lbs. bags). Comes from the same place in Roswell.
