Kinda pertaining to the discussion that got started on the other thread about Blackstone grills. My son got one for Christmas. He also got an accessory kit that has the big, waffle-house style iron press. I got a pretty nice 9-pointer a few weeks ago. He's wanting a good recipe for making deer meat smash hamburgers. I've cooked them, but only the traditional way with Lowry's seasoning salt, but he's wanting something a little more fancy.

Anyone got any good recipes for venison burgers?

When my son-in-law gets a deer he gives me about 10 lbs of ground meat. I mix up 1 lb venison, 1/2 lb of hamburger, and 1/2 lb of mild sausage. The burger gives it a little fat and the sausage gives it some spice. Use hot sausage if you prefer. Pat it out in 1/2 lb burgers and grill it over a mesquite fire. A buddy in Texas ships me a 50 lb box of mesquite chips from his ranch in the Panhandle. I cook most everything on it. Steaks are the best.

I have always cleaned, butchered, boned, and cut/ground/cubed my own. You get about 45-50% more than taking you deer to the processor. That said, to answer your question, go to any grocery store that grinds their own burger. Buy some ground beef fat (NOT TALLOW) and mix it with your burger on a 15 - 20 percent ratio. You can get it for less than half the price of ground beef. Mix 10 lb venison to 1.5-2 lb fat. It makes all the difference in the world in the taste, texture and how it actually cooks. Prepare it, season it, and cook it just like you would ground beef.

It’s time consuming but well worth it IMHO. I’m on my second grinder in 25 years. $ 85 at northern tool. LINK

No idea what it cost this have one processed. Think
The last deer I took to a processor was in 1992-94 but you could probably buy the grinder for the price of one processed deer.

I just cut out the doe's back straps in the field and leave the rest for the coyotes.
