Okay, so my personal view is this:
Beef - Texas style
Pork - Memphis style
KC and SC is shitty BBQ.

Yep, those midwesterners think they know bbq, but it ain’t all that great. I’d agree that Texas is definitely king of beef bbq, brisket and beef ribs are unparalleled here. But I’ve come to really like the central Texas style carried over to pork as well with dry ribs and pulled pork, I don’t like it when the meat is heavily pre-sauced.

I love that Carolina pork bbq tbh. That vinegar based bbq sauce is so good I could drink it.
but I also love vinegar.

I had intentions to do so, but I was also having to boil crawfish and my sister in law took it upon herself to slice the brisket while I was outside handling that. So, the only pic I got of it was one early on...
