Would a Vol win guarantee two SEC teams in the playoffs?

combined with an Auburn victory over KSU discredit the Big 12 enough to insure two SEC Teams?

No, even if AU and UT could win.
May end up happening, but in no way would this "guarantee" 2 SEC spots. Don't forget, there is a sizable group that suggests 2 PAC 12 teams would be deserving.

Sadly, I think whoever wins the OU/Baylor game will end up undefeated due to a sheer lack of competition. The next best team each plays is OSU and both get them at home.

I had this exact thought today. It's a bit unconventional, but has merit.
After the week the big10 had they SHOULD have only ONE team even capable of making the dance. And that team has a loss after week 2. For political reasons if Mich St wins out I wouldn't flip out if they made the final 4. If they lose there is no fricking way that conference should have a team in the final 4.
That leaves the Big12 and Pac. 98% chance they both have a team in the final 4. If Oklahoma and Baylor lose that last statement theoretically should be questionable, same for Oregon and USC.
One from the Pac12, Big12, FSU, and SEC winner would work out fine. But if the teams at the top of those first two conferences shite themselves the SEC should 100% have two teams in the playoffs.
Screw the political shite, and screw what makes the rest of the country happy. As is, there are definitely situations in which the SEC deserves two teams.
On the side, it blew my mind today thinking about just what the SEC has to deal with. There are around 12 teams who could play the actual best team in the country 10 times(don't know who that is) and come away with a respectable showing. 4-6 of those teams are in the SEC and most will play each other. I'm trying to avoid sounding like a biased crybaby SEC homer but this is just how it is right now. I want teams who deserve to be in the final 4 to be there.

I've already posted how it's almost impossible for Baylor to have an unbeaten season. They are WINLESS on the road vs. ranked teams under Art Briles and have to play Oklahoma in Norman.
Only 3 conference teams have ever beaten Bob Stoops in Norman: 2001 Oklahoma State, 2011 Texas Tech, and 2012 Kansas State.
Oklahoma has the best chance of going unbeaten in that conference but even they have to travel to West Virginia, where freaky shite tends to happen. I also give Oklahoma State a chance to beat them even though it is in Norman.

The only other home losses Stoops suffered were by TCU in 2006 (right after the Rhett Bomar scandal) and Notre Dame in 2012 (the "Heisman moment" for Manti Teo)
