Both universities' claims to the 1850s are rather convoluted, but it goes like this.
In 1851, the state legislature said it wanted to establish seminary schools east and west of the Suwanee. East Florida Seminary, what would become UF, opened for class in 1853.
In west Florida, a pissing contest broke out between Tallahassee and a couple of other towns. In order to sway the legislature to accept Tally, a place called the Florida Institute was built and opened in 1855. It was subsequently given to the state. The West Florida Seminary was established in 1857, and it started holding classes.From 1935 until 2000, the State of Florida based the founding dates as 1853 for UF and 1857 for FSU. In 2000, FSU declared that it was actually 1851, tracing back to the establishment law. We could do the same, except that it isn't true.
