I never thought about it, but you're right. The championship games used to be a much bigger deal before the new format

This is why there will eventually be consolidation into only 4 conferences, with each conference championship game deciding who will be in the playoff.
What I would do if I were King of College Football, the Andals, and the First Men is go back to having 6 conferences of 12 teams. The 6 conference champions would make the playoffs with the top 2 ranked teams getting a first round bye.
Each of these teams would play 8 conference games, 5 in their division, 3 cross division, and then 4 OOC games.
It would be up to the individual conferences whether or not each of their teams would have a cross-division rival. Each team gets one permanent OOC rival (Georgia/Georgia Tech, Florida State/Florida, USC/Notre Dame, etc).
Oh, and all OOC games have to be against teams in those 6 conferences. That's right, it's a full regular season split between the P6 and the rest of D-1. However, if your team doesn't make the final 6 in the playoff and you have a winning record, you can play in a bowl, and bowl games can feature non-P6 Division 1 teams.

Texas A&M also brings in by far the biggest piece of the SEC's media market puzzle. Since joining the SEC, they've had a Top 5 finish in football and produced a Heisman Trophy winner. They've been the SEC's 2nd best overall sports program in all the other sports.
They fit in perfectly from a culture standpoint. Not sure what your problem is.
As for Missouri, its a stretch... geographically and culturally. But regardless they've won the SEC East twice since 2013, so no one can say they've not met expectations. No one would have bet a dime on them doing that the day they joined.

Soft sell, we are all getting paid a small fortune and the SECN will still be relevant on streaming devices as the market changes. ESPN is already a player in the streaming game. It actually benefits the fan because you can now watch any basketball or baseball game being played. The market will still be there the avenue will just change.
What alternative do you see as an option?
