Aaron Franklin's pulled pork, Texas (brisket) style.



Easily my favorite way to do it. Pair it with his classic sauce.

Moral (and relevance): The best thing about a pig is when a Texan is ripping it apart.

Damn sure are...there could be tomes written, hell entire libraries of them, about the shite that Texans know nothing about but cooking BBQ in general and pork in particular would be at the top of the list. Texas BBQ is nearly un-edible. It is un-edible for anyone not starving or completely unaware of what BBQ is supposed to be....

I do prefer to use tongs and divide it into sections, and then remove the bone rather than dive right in and start tearing at it.

However the smoked spices in that shoulder look good, you have to admit

If you're doing it right, the bone should be falling out, and the butt falling apart without having to do much. The fact that the gif in the OP has a guy using tools to move it around to break it up is pretty clear evidence he doesn't know what he's doing. Just get you some insulated gloves and have at it if it's the heat that bothers you.

If it's done right there is no real dividing into sections.. or removing the bone.

The meat will basically fall off the bone after you've rested it. Or you just grab the bone and it slides right out.

Yall arent smoking low and slow enough.

I dont have to rip at it. Will come apart with your hands easily. Just have to use gloves cause its hot.

It's done by cooking to the right temp slowly.

Texas knows nothing about the culinary arts.

The best food in Texas comes from Mexico.

Hell, the best BBQ is from Memphis and Kansas City.

In Louisiana we can do that shite in our sleep.
