You played Florida last weekend. While the OL did a better job, let's not pretend that UF is better than their 2-4 conference record. We'll see how the OL does the rest of the year but the only defenses they've had low sack totals against in the SECC are on teams who have a total SEC record of 3-15 right now. 5-2 UGA and 3-3 Vandy had a ton of sacks.
On the flip side, Texas only got one sack against UF. 0 against Vandy. 1 against UGA.
The only teams they go sacks against were 0-6 in the SEC MSU and OU who's also a new arrival without typical "SEC speed" on the lines this year.
They're a bit slow on both lines.

South Carolina showed what happens when you sell out trying to get sacks every play.
We didn't need sacks. 42-13. Sacks aren't like points. You don't rack up all you can.

I'd love to play Miami in the CFP. Too bad the only ACC team to make it will be SMU.

Yes, the two worst games Texas played all year all around were UGA and Vandy. Lets not act like Vandy has better athletes than Florida, when your talking about speed, Florida has more and would challenge the Texas front more than Vandy. That did not happen as offensive scheme and blocking was cleaned up. Let also not forget that when your talking sacks, it is important to recognize each teams offensive scheme, the situation. UGA got 7 sacks on Texas, half of that is credited to UGA blitzing over 31% of the time. That is a lot less to do with "speed" and more to do with communication. Vandy recognized Texas's communication issues on middle blitzes and attacked that in our game against them.

Are we talking about Lines or LBs as well? You included LB sacks in this. Much like the above statement, you need to take into account situation. Texas was getting pressure on Beck when they passed, but due to the large early lead UGA leaned on the run game. Vandy is a run heavy team, thus there are less opportunities to get a sack. Our Edges played well in both of those games. In fact Barron Sorrell (our third fastest edge) had Beck running for his life.

I think most scouts would disagree as both our RT and LT are mocked in the first round. Trey Moore was taking rides in Sabans Ferrari last offseason during his visit to Bama and Collin Simmons is the highest rated defensive freshman in CFB.
The issue you're having is that your simplify it down to and justifying them being "slow" off sacks, when sacks can tell a lot of different things.

In my opinion, I think Texas is talented but over rated.
I am not a coach but they have zero running game due to injuries. They rely on bubble screens and dink passing because they have to. They have athletes on the outside so if the defenders play off, they get 5-7 yards. If the defender misses, they get 15 or more.
If the defense presses and tackles in space, like GA did, Texas has no answer. If a defense can do this against them, this allows the defensive line to really attack and dominate the game.
They will not go much farther when the competition gets tougher.

Didn’t Miami just lose to Georgia Tech?

I’m not sure its injuries. I don’t recall much of a running game since Sark has been here.
We need a bruiser at RB. Sark likes having track stars so we can dink and dunk to them.

Half correct, Sark does us the screen game as an extension of the run game. Without a healthy "big" back we have seen more of this, but Sark really loves the screen game to get his play makers in space.

This is exactly why he loves to get his playmakers in space.

Receivers were running open all night against UGA, the issue was getting into 3rd and long then not having time to throw.

Bookmarked.

We've had a 1000 yard rusher in every year with Sark outside of this one....

Who is this tougher competition? Texas A&M? Bama? Tenn? Perhaps you mean the CFP so the three already listed or the ACC champ? Big 12 champ?
The only two that look really tough are Oregon and Ohio State. That still gets Texas pretty far in the CFP. Nobody is thinking Texas breezes through that.
