If you like nature and walking, Laurel Falls is located near the National Park Welcome Center. A lot of folks do the hike 1.3 miles to the falls. Uphill there, downhill coming back. Another great waterfall is Mingo Falls in the Qualla Boundary outside Cherokee, NC. Only 0.4 mile to the falls, again uphill going, downhill coming down.

You will be 15 mins away from Sevierville where there is a ton of kids activities. Dandrige has a nice quaint coffee shop for the adults.

Depends on what you want for the trip. If you want a fun kid-centric trip stay in pigeon forge/Gatlinburg and just come up for the game. If you want to go to go to better restaurants/breweries stay in Knoxville and don’t bother going to pigeon forge. It’s a long enough drive that you shouldn’t spend all weekend going back and forth

Pigeon Forge’s The Island is the new thing that’s building up. I still like the Mill but it’s a couple hours at best. The road behind the island is really growing. Decent younger kid stuff. A different bowling thing, a snow mountain, random things to do and some shops.
Kids will like Gatlinburg. Take the trolley and just walk it. The aquarium is very nice, plenty of things to explore and options to eat.
The Peddler Steakhouse, the Alamo Steakhouse (Gatlinburg or Pigeon Forge), Cherokee Grill (owned by Calhouns) or the Burg. Plenty of burger and pizza joints if you don’t want steak.
Pigeon Forge is mostly chains, the Applebarn, the Fat Bear, Bullfish, Cabarinos, most of the breakfast places are really good but overpriced.
Hard Rock isn’t was it was 10 years ago and it was just ok then. The chains are just chains. The local goat is meh, mini golf, mountain coasters, plenty of arcades, trampoline parks, etc.
If you are in pigeon forge, take the road through ware’s valley to Townsend and do Cades Cove. The fall is a great time to see bears and elk. It’s a great afternoon to relax.

The only reason to be in Pigeon Forge is to drive through it your way to Gatlinburg. Your suggestion of entering through Townsend is spot on. I also recommend getting a cabin off the bypass.
