I’d agree that pork should be left for bacon. Not for BBQ. Beef is king.

“Authentic” BBQ is hard to find in the New Orleans area.
I prefer to do mine at home.
I also prefer the St. Louis cut ribs with a mix of baby backs.

I do make a Cole slaw (marinated overnight) that works nicely with it.

Stop it. There is no such thing as LA BBQ. Louisiana makes some good shrimp soupy type stuff but BBQ is a conversation LA can't enter. LSU fans don't even grill during tailgating. There's just big vats of soup.
Give me NC BBQ first. Love that Carolina sauce on boiled ribs but not grilled. Texas is good but is not as good as Bama BBQ. Bama BBQ is hickory grilled with tangy sauce where Texas is just the hickory grilled.

I don't know man, I had some BBQ shrimp in the Quarter a few times and it was pretty good. I think the place was called Huck Finn's.
