So if Ole Miss must drop "rebels" what should they be called?

Let's face it. We are in an incredibly PC time in our country and every entity walks on egg shells trying not to offend anyone. I'd say there is a very good chance of this happening.

How about the Confederates? The Jeffersons (named after Jefferson Davis, not that other guys)? The Ole Miss Bonnie Blue Flag? The uniform would be blue with a white star on the helmet. The fight song is easy too.

They should drop "rebels" and go with Rebels.
The capitalization and lack of quotation marks really makes the name pop.

I would say they should go with "Landsharks" just because it's badass, but as you said, we live in rediculously PC times. They probably couldn't get away with it because it would offend ocean dwelling sharks.
