“Edam is a semi-hard cheese that originated in the Netherlands, and is named after the town of Edam in the province of North Holland. Edam is traditionally sold in rounded cylinders with a pale yellow interior and a coat, or rind, of red paraffin wax. Edam ages and travels well, and does not spoil; it only hardens.”
Edam Cheese at Mississippi State dates back to 1938 when Professor F H Herzer ordered 10 teakwood hoops (molds) from Holland right before WWII started. He wanted to bring attention to Mississippi State like the football team. Thus the Dairy Science Department has been making it ever since. It is delicious. You can buy at the store on campus in Starkvegas and at the store in Meridian on 5th Street (MSU-Riley Campus) or order it online. It is only available on line from November to April.
State also makes some great ice cream on campus as well.
