I agree with your mom. My mom was from gheens/matthews. She taught me how to make a real one on the stove. I just was shown the microwave roux and found it works great if I dont feel like taking the time.
Microwave roux: sift 1/2 cup flour into 1/2 cup oil in a large glass bowl or measuring cup. Bigger is better to prevent boil over. Whisk really good. Cook on high for 4 minutes. Carefully remove from oven with mitt (it can explode all over you). Stir. Repeat in 1 minute increment stirring each time until the color of peanut butter.
Perfect every time. Burned myself only once.

I dont trust microwave roux. I could see that ending in a clusterfrick. I promise. I would have that shite exploding everywhere. A roux burn hurts like a bitch too.
