This is the top answer for me

Others are the Army/Navy game and the Red River Rivalry

I've been to Army vs Navy as a guest of some clients. That game is simply an amazing atmosphere.

Might sound crazy...but hear me out. Arizona vs Arizona State (at Tempe).

First...Tempe can be an awesome place to visit.

Second...they play the very end of November...so for last year's game the high was 75 and the low was 54. The 2020 game (played in December) was 63 and 48. That's pretty hard to beat when everyone at home is freezing their asses off.

Lots of good games have been mentioned. Certainly, all the standards have been mentioned.

But a few comments on some of the more unusual ones mentioned.

Arizona-Arizona State: This game has a great dynamic. Neither team really has another rivalry to speak of. The game is basically an extension of the rivalry between Tucson and Phoenix. Big brother/little brother thing. However there are way more UofA people in Phoenix than ASU people in Tucson. The UofA being the flag campus of Arizona looks down at ASU in the same manner as Phoenix looks down at Tucson.

Iowa-Iowa State: Iowa fans are a special kind of annoying. They are a lot like Nebraska fans with uglier colors. Blind worship for all things Hawkeye. OTOH, Iowa State feels like they are Iowa's University because Iowa is littered with students from Illinois. Finally Iowa State gets tired of Iowa's Big Ten arrogance thrown in their face from Iowa fans.

Oklahoma-OKlahoma State: A very toned down version of the Iron Bowl. Typical Flag-Ag game. Bedlam is a great and unique nickname however OU fans don't care for the name "Bedlam" because it is only "Bedlam" on the rare occasions OSU wins. OU has gotten to the point that there is no real joy in beating OSU. Just a relief that you didn't lose and have the Oklahoma Aggies act like lunatics.
