I bet we don't, as many believe the BCS trophy is the only trophy awarded for the "NC" today, that isn't so, the same people who were awarding "NCs" back "in the day" are still doing so today, all of them are generally siding with the BCS champion except the AP who has voted along side the BCS championship game winner as their champion so far.
The playoff will not change the system, it will change the way we go about who gets awarded these trophies, the NCAA still will not recognize a NC in FBS football, when they do, you will see the bowl system go away, you are not going to see that happen due to the money it generates to sustain FBS program as well as several other athletic programs as a whole...
If you don't believe there are more than one NC trophy awarded each year, look it up, I'll give you a hint, Alabama was awarded more than the Coach's Trophy (Crystal Football) and the AP NC trophy last year as well...

If the FCS can hold a playoff, why can’t the FBS?
The overwhelming majority of presidents at FBS schools have consistently said they don’t want a playoff. They cite academic challenges, a need to support the traditional bowl systems and the importance of each regular season game under the Bowl Championship Series formula. The BCS was created independently of the NCAA in 1998 with the goal of matching the nation’s top two teams from the Football Bowl Subdivision in a bowl game.

The do however recognize some of the polling institutions but still dont actually recognize a champion for d1

Come on now...anyone else and I would question their reading comprehension skills. "The Division I Football Bowl Subdivision decides its champion through the Bowl Championship Series. " The NCAA obviously recognizes the championship's existence. Do they sanction it? No. But they obviously do recognize it. There's a difference.

You do know the BCS is not the NCAA

They recognize the BCS existence and what they do and state that the BCS decides a champion, but they do not officially recognize a champion.

acknowledging something exist is not the same as officially recognizing something
