It depends on the situation. Many different ways to communicate to folks. In management, you have to know the employees and how they operate obviously. Showcasing strengths and hiding weaknesses is always key in terms of getting the best out of someone. Biggest challenge since covid is staffing imo. Staffing has always been a challenge to a degree but, since covid, being short staffed has become an unfortunate norm. Labor cost goes sideways when you have lesser staff but many of them go into overtime. Rising cost of food can and has affected food cost in various ways. Creating accurate weekly projections is always challenging and the advent of online/Togo sales has risen in many restaurants from 15% of overall sales, to as high as 40% in some stores. Being able to communicate the importance of every aspect, from product not being overstocked and dated correctly, to high health department standards all the way to proper training for new hires, is the most challenge aspect of what I do.

I pray everyday brother. Many times a day that is. If the good lord in heaven and Jesus Christ our savior were not in my heart, I know I would probably be dead or in jail given what my temper use to be in my younger years. Let's just say, I spent a night or two in jail for fighting, often, when I was a young'en. I know I troll about on here, especially with LSU fans but in all seriousness, and most importantly, Christ is our savior and if he loves me, he truly loves everyone.

I forgot to mention one of the most important things I stress to staff about(im still up at 1 am checking daily sales reports cause I rarely sleep a lot now a days and my mind isnt as sharp after working 26 of the last 27 days)..controllable cost. By that, I mean cost we can control, for example, portioning the right amount. Example of this is correct portions for something as simple as a caprese salad. Over portioning can affect food cost dearly in the long run. Little things like this that can often stress me the most and communicating and providing examples of accurate portioning, can be a big difference in P&Ls(Profit and Loss) for each quarter and also affects bonuses. I'm OCD with everything, my home, car and especially work so im very thorough.

Want to know an ultimate irony in my life? Mother is an Auburn girl. She is the only one that can call me and sing war eagle to me when they do beat us, and I won't hang the phone up. If I ever get married again, been divorced for years so it is doubtful at my age, 48, my luck it will be to a Tenner girl and football season will just be miserable if Bama loses to both.

No offense, but id rather not say. I mean, I don't go around asking everyone where they work. Let's just say there is a very good chance you have heard of it and it is pricy and the food superb or I wouldnt work for them. I cut my teeth years ago in the Darden franchise, I will say that so ironically, I did work Olive Garden, Longhorns and a few other of the restaurants they own when I first got into management.
