Can someone explain to me why he would seem so pumped up about a large hit that would be a 15 yard penalty?
He clearly shoudlve realized as he was hitting the guy that he never had the ball. And if so, why did his dumb arse start running off the field when the play was still live?

Simple, if he thought the ball was really close he might not have been aware of the penalty and thought he caused a fumble.
Use Polamalu as the prime example.
He's supposed to stop turn his head and look for the ball.. Ok, then there is %05 chance of causing a fumble.

I'm candidly pretty pissed at this. Doesn't happen often (don't talk shite about Casey Dick...) but I may go find a Tiger walking in a mall and Wade his arse. Hard.
