I think they were coerced into voting a certain way. Their true intentions were made known when they recruited these athletes and either signed them or attempted to sign them.

Nobody is preventing anyone from hiring them.

LSU indicated a different intention when they joined the SEC and decided to keep being a member.

If that is LSU's intention, they can leave the SEC. Kiffin claimed he was only doing it because no rules prevented it.
