Meat on the Hoof was written by Texas football player, Dave Megessey(sp?), I believe.
Meat on the Hoof was written by Gary Shaw. Meggyesy wrote his own tell-all book, but he was from Syracuse and played with the Cardinals.

Thanks for the correction. I read that book as a teenager about 45 years ago.

Several good nominations in here. Here are some others:
McKay: A Coach’s Story - about John McKay’s USC teams
Buckeye: A Study of Coach Woody Hayes and the Ohio State Machine - self explanatory, but a good look inside his program.
John U Bacon has a couple of good books out about Michigan football.
The Perfect Pass by SG Gwynne is more modern and digs into the offensive genius that Hal Mumme and Mike Leach adopted.

Clay Travis wrote a book about Phil Fulmer and Tennessee that I keep meaning to start. LINK /
He also wrote a book years ago before anyone really knew who he was. Dixieland Delight. It's pretty good.

Really good author. Met him a few times through work in the late 90s, early 2000s. His biography of Bryant, Coach, is a great read.
A War in Dixie tells the history of the Iron Bowl while also chronicling the weeks leading up to the game from both sides.
Paul Hemphill's A Tiger Walk Through History is probably the definitive history of the Auburn football program. His biography of Hank Williams is also really good.
The most unique book I've read is Damn Good Dogs, about the UGA mascots.

Even more amazing when you consider several subsequent aggy coaches kept that thing alive. I can't imagine coaches these days wanting anything to do with anything started by the coach they replaced.
Slocum actually did pare it down to what we have now, which is one walk on player. He only did that after several years of these guys just not being able to make up for the size and speed difference with reckless abandon.
Slocum is an incredibly gracious man, though, and would not be the type to cast a bad light on the coach that gave him his platform to begin with. There was some shenanigans to clean up from Jackie, but Slocum showed no interest in trying to show him up.
