OH this debate transcends food.
Edit. Not that I'm a Dallas fan. Houston just sucks. Of the metros i'd take San Antonio. Then Dallas.

No. Dare to meet you anytime for taste test, Doubt it would happen but confident in my cooking. Also mastered red beans in rice, shrimp creole, blackened fish, dirty rice and jambalaya. Obsessed with creole cooking. Love it.

Possible...but I doubt it. You’ll find that gumbo in NO will typically have tomato in the base. Further you move west, heavier roux and no tomato.
My wife can’t figure out why her gumbo isn’t as good as mine. I have a passion for cooking...she doesn’t. I don’t use tap water, I like to go fishing before I make a gumbo, use cracked BP crabs/BF/lump/and claws(peeled), 21-30 ct. shrimp (fresh), and oysters (fresh). I sometimes spend 3-4hrs just getting the stock exactly how I want it before I start dropping seafood. If you don’t let $$, time, or effort get in the way, anyone can make a great gumbo.

I rarely keep fish and when I do, I don’t freeze it. So it doesn’t make much difference to me. I will say I’ve been getting close to joining the dirty 30 trout club, so you can keep your 12 inch trout.

We got big fish too. Just people dont target them as much as texas. And they dont come up in the flats except the islands and beaches. We have days where you can keep 25 3-4 lbers. Fish fry always brings people together. I rarely freeze fish. Give it to friends and co workers too sometimes.
