How many wins are needed or what year is the cutoff? For example, Michigan went 2-0 in 1884, Auburn did the same in 1893. Would those count? UGA went 4-0 in 1896, is that enough wins?

We actually have a shite load of those, if you only count regular season. Neyland considered Bowl games to be a waste of time, basically just played them with intramural teams.
