The absolute best hands down is regency Seven Seas. All inclusive including excursions. Adults only. You pay for what you get but it’s kickass.

They were a client of an agency I worked for about a decade ago. I did not approve of their business practices. They may have changed, but I doubt it.
Viking and Norwegian were both very nice and usually get high ratings. All this said, I've only been on a couple cruises, so my input is limited.

My two favorites are Regent and Oceania. If you want a third choice, then Celebrity Cruises.

Just got off of a cruise on Carnival Celebration out of Miami. Just my wife and I went for anniversary . We usually cruise with friends out of NO during the summer and there are a lot of kids . Celebration is a new boat and went the week before Christmas . It was awesome and hardly any kids

Nicest cruise line we have been on is Oceania. Did a 12-day Med cruise with them. They do not cater to kids so there was not many kids on board. Disney was a close second.
I have also been on Norweigan, Princess, Royal Caribbean, MSC and Disney. I would do any of them again.
