Please elaborate…
She was a well done with steak sauce person when we met. But I'm not having it. I don't give people a hard time about how they eat their food 99% of the time, but this is that 1%.
She didn't want it to be "bloody". So I had to explain it to her that it's not blood, it's just a protein that stores oxygen in the muscles. Blood is drained otherwise it would taste bad etc. That helped a little.
She liked the taste better and how much more tender it was when cooked right, but would turn the lights down so she couldn't see it for awhile.
Now she eats it medium-rare like it's no big deal and has for a long time. But slightly more on the medium side. She likes the texture better. I leave her steak on about 30 seconds to a minute longer than mine.
Prime rib has all that red/pink. I think she'd be happier just cutting them into steaks.

The only tradition (other than the great food) is hanging ornaments on the tree. We have some that go back past 50 years.

Dad’s forever girlfriend is a well done steak with… ketchup. And so she’s not allowed to eat steak around me because that’s gross. She sees nothing wrong with it. I ask her mother if she was dropped on her head one too many times. Pretend grandma is always down for shite talk. That’s our love language. Talking shite about her kids and their life choices.

Wife and I started making fettuccine alfredo on Xmas eve in a nod to the great festivus classic The Holiday

We used to go to my in-laws on Christmas Eve, then Christmas is my daughter's birthday, and she loves pork roast, so we have that for supper every Christmas Day night. Now that my wife's family is too dysfunctional, we've moved Christmas with them and will spend Christmas Eve at home with just our little family.

What cheese do you use and where do you get it?
I've considered making this in general, but I'm not a big cheese expert and I don't think the kraft grated stuff would be very good.

Do you and your people have any interesting holiday traditions?
Nah, they don't allow those kinda things here.

My mind has gotten pretty scary if that’s the looks of it now.

I admire and respect this as you need to pay it forward when cooking creole or cajun food. Good eatin should always exist even as they try and dumb down the pallet's of the masses.

My brother and I (dad used to join us until dementia got him) grab our guitars and play a ton of Robert Earl Keen, John Prine and other Americana songs. It isn't Christmas with out "Merry Christmas from the Family"

If you check out a guy named Babish on YT, he takes you through a handful of ways to make dishes, from really easy to more advanced, showing you mistakes and what you'll end up with along the way.
Fettuccine Alfredo from The Office
Similarly, here's about a half-dozen ways to make mac and cheese:
Mac & Cheese
The first one shows you why it's not a good idea to use the pre-grated cheese, as you mentioned.

I laughed at the first one because I've tried that and it sucked so bad.
I'm gonna give the 2nd one a try, thanks.

Bonefires are buildt on the Mississippi River and lit on christmas eve to light the way for santa to get to Louisiana. We go down every year and see the latest build. This year they buildt a white tail deer. It will burn nice.
