Stay at the Best Western on North Rampart. They have the BEST breakfast buffet anywhere! Concerning restaurants, Deanie's Seafood, The Gumbo Shop, Muriel's and Pat O'Brians are some of my favorites. Have fun!

The Old Ursuline Convent museum (inside), Lalaurie Mansion (history of), the French Market (through) that Looney mentioned, and of course St. Louis Cathedral (inside) are all interesting.
Architecture tour in the Garden District or a cemetery tour might be fun if that's your thing.
Guided tours can give you lots of historical information of course — like most everything structural you see is actually Spanish — but if you're short on time you can cobble together a decent walking route yourself and see a lot.
