I need to hit the next class they have here. I couldn't get up to Mesquite for this year's.
I'd like to be a certified judge someday too. Being a guest judge was really fun!
Not sure how this turned into a thread about BBQ....

My fault. I have a tendency to do that in real life too. You'd be surprised how many conversations I'm in that turn into BBQ, Mizzou, and Boob discussions.

Well, I can probably talk about the first two. But since I own a set of the 3rd, it doesn't have the same appeal to me.

I love all BBQ. KC, Memphis, Carolina, Texas. I AM NOT crazy for what they call BBQ out here. It's cooked on a grill, not smoked!
Because BBQ is like sex, you take what you can get.
Sometimes, when I eat BBQ here I close my eyes and try to imagine I'm at Okie Joes. It never works. I WANT SOME frickING BURNT ENDS DAMNIT!
Sorry, yeah, two of NCST/UVA/VT/UNC/Duke would be cool.

I'm less crazy about Texas style than the others. But yeah, grilling =/= bbq. Can't you find a good little hole-in-the-wall bbq joint somewhere out there?

Let us not allow this board to run amok. The proper form of "not equal" is != not =/=.

There's one that's not bad, its Texas style though, which is my least favorite style. All the BBQ spots here seem obsessed with Texas, which I find extremely annoying.
We recently got a place called Dickey's which is a chain apparently, so I won't get my hopes up. When I want real BBQ, I smoke my own.

That is exactly why I have avoided BBQ comps. To me BBQ is not about presentation or how the meat stretches or whatnot. It's about groans while folks eat it & watchin them go for seconds and thirds when already full. Those are the best judges in my opinion.
VT & Clemson is my vote

Brisket?
Also, I've been to Memphis once, ate in 3 different BBQ restaurants and all of them were amazing.
Also thought I was in a crackhead filled version of St. Louis because of all the Redbirds shirts I saw people sporting. Forgot that the Cards farm team is the Memphis Redbirds.

The presentation part was a little goofy, but the texture is important, IMO. You don't want it to be too dry or tough, or mushy either. Nobody's going back for 2nds or 3rds if it is. But yeah, I didn't care if it was garnished properly. That's completely a competition thing.
Of the places I've been, Memphis and Kansas City are the meccas. But the absolute best places I've found are little hole-in-the-wall places in little towns, with their own smoker in back of the place.

I do it all. Brisket, pork butt, pork shoulder, ribs, turkey, I even smoked brats once.

I understand that's probably the best you can get out there in SoCal and I truly feel bad for you on that front. Although you do have perfect weather year round so I guess that's pretty nice.
