those three 5*s that left were freshmen that transferred out?

No.
We lose Isaiah Wilson (junior starter RT to the draft)
Lose Deandre Swift (junior starter rb to the draft)
Lose Cade Mays (sophomore rotational starter to Tenn).

Just to give you a heads up. Starters are considered as being on the two deep.

I'm not sure what this means. There are starters. And there are guys who come off the bench. We played a ton of 5 stars on the 2 deep. But those freshmen and sophomores will now be sophomores and juniors. They will be starters this upcoming season where they came off the bench last season.

Because college football rotates players so much that your "backup" is in the game for nearly as many snaps as the starter, with some positions being the obvious exception.

DL gets the most rotation. WR1, ILB, and CB1 getting among the least along with, obviously, QB. Not uncommon for a deep team to rotate RB, various OL spots, OLB, and their safeties (sometimes, not as common though). Especially if you run more complex schemes on offense or defense.
