dry rub or marinate???

People call me strange because I marinate my ribs and use dry rub on my chicken but I swear to god I have this down to a perfect science....what about y'all? Dry rub or marinate???

I love a dry rub on my ribs, but hey... you are cooking for you - so whatever you like!

Anything you do with chicken - do a brine first, especially if grilling. Makes a world of difference.

Dry rub all the way. Brine makes ribs mushy and screws up the texture.

brine first then air dry overnight in the fridge with some sodium bicarbonate on the skin.

Why not both? Ive never done it but i may marinate over night. Dry, qnd then dry rub over night and then smoke the next day.


Seems like a winning combo now.

I usually dry rub ribs. I make smoked wings that i let sit over night in a dusting and then i make homemade jalapeno/peach/bourbon bbq sauce to put them in.

You should read a book called the barbecue bible.

I don't marinate ribs. I want them to have a little bite and not totally falling off the bone. Dry rub with a mustard or jelly glue for me.

As most seem to be in agreement....it all depends on what\how your cooking.

I dry rub pork, brine then sprinkle on seasoning for chicken, and only use a little Kosher salt and cracked pepper when grilling steak.

Dry rub. Brining can be worth it though. My dad uses a brine and a dry rub for his ribs and they are awesome. I wouldn't marinate ribs.
