My dad attended LSU from 69-73 or so. Also born and raised in Metairie.

His explanation for why Ole Miss despised LSU (and still does) is simply this: Ole Miss is filled with a bunch of rich New Orleans kids whose daddies couldn't get them into Tulane.

So Ole Miss started to really hate LSU because their students grew up hating LSU.
