Medium is cooked to 145°F and all foreign parasites are killed. There's no reason to go past medium if your worry is potential health risks. If the sight of "blood" (it's actually myoglobin) is the issue, then yes go for well done, but truly you don't need to go past medium for health concerns.

Medium rare with garlic butter while it sets for me and the lady. When cooking got fam I have to practically burn my moms and it kills me inside.

Contamination in steak comes from bacteria. Because steaks are dense, the bacteria is primarily on the surface so a hot skillet takes care of the bacteria while the inside is fine. That's why folks can routinely eat rare steak with no issue while ground beef is unsafe.

Oddly enough, some studies have found well done steaks to be potentially more dangerous. Studies have linked colon polyps to folks that tended to eat well done meat. They theorize it's due to chemicals released when the meat reaches too high of a temperature.

Tldr; medium rare steaks are fine and enjoy your arse cancer.
