It may depend heavily on what he has done in the weight room. If he gets up to the 240ish range he will be a full timer.

Sounds good. For me it starts with the quality of the beef. I like a toasted bun, pepper jack cheese, onions, lettuce, tomatoes and thinly sliced bacon. I've been known to spread hot chow chow to replace the pickles.
