Preserved Lemon and Herb Spatchcock Chicken
Rubbed with oil, preserved lemon, fresh and dried herbs, salt, pepper, garlic
Grilled 425
25ish minutes
Grill-roasted sweet potatoes
Covered pan on grill 425, stir occasionally 30ish minutes
Massaged Kale Ceasar

(Anchovies 4 filets, or anchovy paste 4Tblspoons, 1/4 cup sour cream, 1/4 cup yogurt, 1/4 cup mayo, squeeze of Dijon, salt, pepper, splash worshectichire, 1/8 cup parm, dash or 2 lemon juice, 1/2 cupish EVOO)
Tasted fantastic. While turning the bird you can easily see when the juices run clear. Pull that bird for juicy and tender bites! Spatchcock allows for a quicker and more even cooking throughout.

My wife, as always, provided assistance and floatation devices:)

Wow…throwing shade after being MIA on game day.
We were providing live in game updates while in the heat of battle in the midst of cooking the 4th of July dinner surrounded by family and friends. Including IT getting started at 3am and going to the pool. No time for editing or perusing YouTube.
It’s the difference between unedited Kirby Smart miked up on gameday vs the 5 second highlight on Sports Center on Sunday morning.
