Observations-
-My theme song is the only one without commercials at the beginning.
-JD has been assigning Van Halen songs thus far.
-I almost picked Panama instead of my current selection.
-Squatch is cooking fine, but his delivery is arrogant. This may hurt him.

I’m comfortable with the ribs. But a butt has a mind of its own. If I wrap at 160 or so to get it through the stall it could be ready by dinner - but more than likely it’ll be afterwards.
I didn’t wrap my first two times and those were 14 hour cooks.

Foil. I’ve never tried paper. Usually you can cook a butt at a higher temp but I don’t want to spoil the ribs. My top end is 250 ... which will take a while.
Also, I’m not trying to sound arrogant...just documenting so anyone with a new WSM can learn from my previous mistakes. Some of the stuff online is BS.
For instance, putting your meat on without letting the charcoal settle in results in some nasty flavor. If you add wood along the way you get more of the wood and less of the Kingsford. Ribs don’t need a lot of smoke.
Now the waiting begins.

I won’t have an entry for sides. My wife went with her friends to some chick wine thing so I’m having to babysit the smoker, dog and kids. I was planning on some black eyed peas but need a sweet onion and ham...but I’m housebound.

This smoker is the new secret weapon. Looking for consistency in heat and temperature and evenness today and I hope it helps me achieve it.
If you go over that curb in the picture you actually take a pretty steep tumble down the mountain all the way to the river.
