Could you get shots of the Saturn Station wagon hooked to a boat in the background of your rib pics ?

Ladies and Gentleman, The inaugural Rib Off Champ has arrived!

RB,

As a past champion, we look forward to your input. Any criticisms, constructive or otherwise, from anything you've observed so far with our first three competitors?

Observations-

-My theme song is the only one without commercials at the beginning.

-JD has been assigning Van Halen songs thus far.

-I almost picked Panama instead of my current selection.

-Squatch is cooking fine, but his delivery is arrogant. This may hurt him.

RibOff3 Update:

-Litigtor has a butt probe in a crab cake
-we are-naming Squatch's dog from "Soda" to "Sony"
-deeprig's dog has a lamp shade on its head and lives in a metal filing cabinet

Yes but his dawg is eating the wood he's using for smoke and sniffing the smoker while your's is laying down completely bored.

The dawgs are speaking.

Temp is peaking as the rain comes....who will be victorious?

I’m comfortable with the ribs. But a butt has a mind of its own. If I wrap at 160 or so to get it through the stall it could be ready by dinner - but more than likely it’ll be afterwards.

I didn’t wrap my first two times and those were 14 hour cooks.

Are you going to wrap with butcher paper or foil?

Litigator, Is the new smoker grill the secret weapon you were hinting at? Can we get a run down please?

I'd like to judge the secondary categories.

Perfect. What are you seeing so far?

I think Litigator is grilling out on the streets. That looks like a curb behind his smoker.

Foil. I’ve never tried paper. Usually you can cook a butt at a higher temp but I don’t want to spoil the ribs. My top end is 250 ... which will take a while.

Also, I’m not trying to sound arrogant...just documenting so anyone with a new WSM can learn from my previous mistakes. Some of the stuff online is BS.

For instance, putting your meat on without letting the charcoal settle in results in some nasty flavor. If you add wood along the way you get more of the wood and less of the Kingsford. Ribs don’t need a lot of smoke.

Now the waiting begins.

secondary categories.

I won’t have an entry for sides. My wife went with her friends to some chick wine thing so I’m having to babysit the smoker, dog and kids. I was planning on some black eyed peas but need a sweet onion and ham...but I’m housebound.

BTW my umbrella is going to smell like a barbecue joint

I don't know why, but a crabcake hooked up to a probe might be the greatest thing that's happened in any RibOff ever in world history

What’s a wsb? Besides “welcome south brother” is that some variant of a Smokey mountain or a typo?

Should’ve been WSM as in Weber Smoky Mtn. I’ll correct.

This smoker is the new secret weapon. Looking for consistency in heat and temperature and evenness today and I hope it helps me achieve it.

If you go over that curb in the picture you actually take a pretty steep tumble down the mountain all the way to the river.
