There's also an app called Plex which is basically Kodi for Roku. I installed a channel on it called ss-plex and basically every single tv show and most movies are on it.

Plex just transcribes internet feeds to be playable on a tv. So basically anything on the internet can be run via it if someone builds the app. Works on Roku and Chromecast (I don't have a firestick or appletv but it wouldn't surprised me if it works for them too).
I'm not sure but I think Kodi only works with firestick

Actually it works on any Android, OSX, Windows or Linux device, but you are 100% correct that Plex is a better option just for the Roku. It is actually a fork of Kodi (when it was XBMC) designed to get onto devices like Rokus, some smart TVs and AppleTVs. I use Plex personally to transcode my media library to my smartphones when I go on work trips.
One advantage of Kodi just for sports streaming use is it has access to more streams (because they don't have to be transcoded as they just played natively on the device). With that said I would highly suggest Plex for any current Roku owner who wants to play unofficial streaming content on their device.
