Exactly. Beef is good, but nothing beats a solid rack of Memphis dry ribs.

It's all subjective, but I prefer beef short ribs any day of the week. More work, though.

It is. I grew up in this area, so I am used to pork. Having both, I still prefer it and you get a wide variety of styles here in Memphis. Still, I certainly wouldn't turn down beef brisket that is cooked right. You just don't find a ton of places that put the effort into beef here. I had some on a recent trip to the Dallas area, and it was very good.
And for any of you looking for a BBQ option here that isn't The Rendevouz or Corky's when passing through, try The BBQ Shop (best sauce), Central BBQ (best variety), or the Germantown Commissary (excellent pulled pork). Memphis BBQ in Southaven, MS is a little hit and miss, but is very easy to get to if you are coming up I-55. It's run by a former winner of the Memphis in May BBQ Contest.
