I just looked up catfish one and looks like there used to be one in Starkville but I guess it folded also. IF they are still going in south MS it was probably mismanaged and couldn't handle franchising out many stores.

Yeah it was pretty expensive and hit or miss on food quality a lot of times.

That's why they didn't make it. People won't pay high price for catfish it isn't a steak. I don't know why some restaurants jack up catfish prices... the difference in what they charge and the price they buy it from is unreal. I've looked into the cost aspect of it to see if it's necessary and it isn't. It's perfectly feasible to sell catfish plates from anywhere from 6 to 10 dollars depending on portions and turn a profit after estimated overhead costs.

Probably bought their fish from a smaller, lower quality processor. Those don't always taste test their fish as thorough as the bigger plants b/c they can't afford to turn away slightly off flavor fish when the industry has a shortage.

That's pretty accurate. If you're ever around new Albany Thursday through Sunday there is a place called Taylor's but it's not the same people from Taylor ms. Has excellent catfish and a decent steak for the money.
