The only two I can think of that were regarded top 3 in both. Probably derrick Thomas and its a stretch but maybe bo Jackson as well.

Wes Chandler of Florida, an AA WE in a wishbone offense. He played from 1974-77 and he was incredible...making acrobatic catches. He also played rb/qb in 1977 out of necessity.
Remains the HIGHEST drafted WR in SEC history, 3rd overall pick, which is never seen much since so many talented WRs are on teams everywhere. He unfortunately wasted about three yrs with the putrid Saints back then and thankfully, he was traded to San Deigo where he could showcase his skillset...played also along John Jefferson and DBs hated facing them. Air Coryall as the offense was called put up huge numbers, but had to outscore other teams because of porous defense and lack of great ground game.

Frank “Gunner” Gatski is a legendary WV player.... the FB Field at Sherman HS which he attended still bears his name...,
