Ijams Nature Center is just up the river from UT. It's pretty awesome.
Marble Springs Historical Site is pretty cool, too.
Both of these are in Knoxville...not just the surrounding area.

I have to say I enjoyed my time there. Spent a week in the Gatlinburg/ Pigeon Forge/ GSMNP area and enjoyed it immensely. Beautiful countryside, whitewater rafting, etc.
And a pancake restaurant every 19.26 feet. I have never seen so many pancake-centered restaurants in my life.

Not a fan of all the country western crap and tourist traps like DollyWood and Gatlinburg, but the mountains are beautiful and Great Smoky Mountains National Park is cool.
