Talent trumps scheme every time.
UK had talent on that offense outside of Couch. WR Craig Yeast, WR Quentin McCord, and TE Jimmy Whalen both went on to play in the NFL just off the top of my head. I'm pretty sure that Craig Yeast/Tim Couch combo still has some NCAA records that stand out there.
UK had talent at that time on offense. Hell, as Dale said, we bought talent and got caught doing so. But we once again come back to without a defense your offense, even a high powered offense, can't do it alone.

The Hurry Up No Huddle offense can be effective if you have a QB that is calling the plays and making changes at the line.
But most teams that run the "no huddle" nowadays are really running this bullshite meerkat offense where they line up quickly but then the entire offense looks over the sideline for the play call. It isn't really a hurry up when you take 20 seconds to get the play off. It's a gimmick.
Oregon is actually effective because they actually do snap the ball quickly after they line up. It's all about rhythm.
