Funny, maybe you should have applied that same thing when I said I never heard of the term. If it was as common as people are making it out to be, I find it hard to believe I wouldn't have heard people refer to these restaurants that way.

Did you call it soul food or country cooking then? The 3 terms are pretty interchangeable if you look at what is being served.

Didn't call it anything special. Home cooking? It was just the same kind of food that was common to have at home. Not all of it, but in general. Especially on a holiday.
But as I mentioned earlier, the names for such places often included names like "Country Kitchen" in rural areas. Always someone's name first.
Life has good and bad times, I don't sit around thinking about the bad times.

Where I live in TN the only decent meat and three is Cracker Barrel. Shame these restaurants don’t exist much anymore.

Used to be so good when I was a kid. But, I may have just been memorized by perusing the toy section while we waited.
They had the breakfast all day long thing locked down as early as recall anyone else, and it appealed to me. And, their dinner options used to be solid with flavor and portion size. But, honestly, I'd prefer Waffle House to CB for breakfast food. And, the sides are generally bland and food overcooked for lunch/dinner. Their chicken and dumplings are a damn crime against humanity.
I do like most every catfish dinner I've had at CB though, except for their dry arse hushpuppies.
All that said, it's only a meat and three if you uncharge for the third side.

This sounds like a term some gen z hipster would make up to feel associated with something. The term may have been around for some time but only got popular this century.
I looked up a list of current Meat & 3 in NC and most of them were opened this century. Many of what fit this category are not even listed. I could probably name 50 with ease not listed

I think I've probably heard the kitchen ladies refer to meat and three as what we get while we are selecting
The restaurants themselves to me were cafes, kitchens, soul food restaurants, or just the name of the person who owned it
