My ranking

1. Any and all Cajun/Creole

2. Texas BBQ, all styles (direct and indirect heat) and wood types used for smoke.

3. TexMex, the good stuff...no chains or restaurants along the San Antonio River walk.

4. Chicken fried steak with cream gravy made
with drippings.

5. All the southern redneck/hillbilly stuff mentioned in the OP.
