This. I like it, but BBQ is pork.
Also, chilli should never have beans and always use chilli grind or shredded beef.

Even assuming I accept that, does BBQ have to be smoked? I made some pulled pork in a slow cooker this weekend. Pork shoulder and cooked it down in its own juices, then pulled it and cooked it a little longer in the pork fat. It was delicious.
Then I used the pork fat to cook down some onions, added some vinegar and my spices. Finally just added a little ketchup and it made a decent sauce to go with it. Next time I'll make the sauce minus onions and pork fat and cook it in that. Then you'll have a sauce slow cooked with the meat your cooking.

Commissary is the best BBQ in Memphis. This coming from someone who eats free at Rendezvous.
